Chocolate Almond Protein Bars

With a delightful combination of rich chocolate and crunchy almonds, these bars provide a good dose of protein and essential nutrients to keep you fueled throughout the day.

Essential Sports NutritionIngredients:

  • 1 cup (240g) almond butter
  • 1 cup (90g) rolled oats
  • 1 cup (96g) vegan chocolate protein powder
  • 6 tbsp. cocoa powder
  • ½ cup (120ml) + 2 tbsp. agave nectar
  • ⅓ cup (56g) vegan chocolate chips
  • ½ tsp. extra virgin coconut oil
  • optional vegan chocolate drizzle (not included in nutritional calculation)

Essential Sports Nutrition What you need to do:

  • Pour the oats, vegan chocolate protein powder and cocoa powder into a food processor and blitz to break up the oats.
  • Add in the almond butter and agave nectar and blend together. You will have to scrape down the sides of the food processor a few times when blending.
  • Line a baking tray with parchment paper. Take the chocolate bar dough and place the dough onto the parchment paper.
  • Form the dough into a long log. Then place another piece of parchment paper on top of the dough. Using a rolling pin or glass bottle roll out to a long 11x16 inch rectangle, ½ inch in thickness (28x15 cm. rectangle, 1 cm. thickness).
  • Using a ruler cut straight lines down all sides of the rectangle. Use the excess dough to make 2 protein balls.
  • Place the balls and rectangle into the freezer for 10 minutes. Then take the dough out of the freezer and cut it into 9 even bars.
  • Optional chocolate drizzle: Use a small pot and place in the vegan chocolate chips and coconut oil. Heat over medium-low heat. Stirring often until the chocolate chips are just starting to melt. Remove from heat and stir until all the chocolate chips have melted. Drizzle the melted chocolate over the protein bars and balls.
  • Optional: Take 2 tablespoons of coconut flakes or almonds and sprinkle over top of wet chocolate.
  • Once cut, place bars back into the freezer for 5 minutes to set. Store in the freezer in an airtight container.
  • Serve frozen, straight from the freezer.
