1 ½ cups (270g) fresh blueberries

  • 1 ¼ cup (300ml) almond milk
  • 1 tbsp. apple cider vinegar (or white wine vinegar)
  • 2 tbsp. ground flax seeds
  • 4 tbsp. water
  • 1 ¼ cup (150g) whole wheat flour
  • ¾ cup (90g) all-purpose flour
  • ½ cup oat or wheat bran
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • ¼ cup (60ml) avocado oil
  • ½ cup mashed banana (1 medium banana)
  • ½ tsp. vanilla extract
  • 1 cup (180g) monk fruit sweetener in powdered form (or substitute with coconut sugar)
  • ⅛ tsp. salt

  • Preheat the oven to 350°F (180°C).

  • Line a muffin tray with 12 paper lines.
  • Measure out the almond milk and pour into a medium-sized bowl. Add in 1 tablespoon of apple cider vinegar and allow to sit for 5 minutes.
  • Place the ground flax into a small bowl and mix with water to make flax eggs. Allow to sit for 5 minutes.
  • Add your whole wheat flour, all-purpose flour, oat or wheat bran, baking powder, baking soda, and salt into a large bowl. Mix well and make a well in the dry ingredients.
  • Mix the avocado oil, flax eggs, vanilla extract, mashed banana and sugar into the milk.
  • Now pour the wet ingredients into the dry ingredients. Fold the ingredients together, taking care not to over mix. Add in the blueberries. Fold a few times more to incorporate the blueberries and then scoop equally into each of the 12 muffin liners.
  • Bake for 16-18 minutes, or until the toothpick inserted into the center of the muffin comes out clean.
  • Remove from the oven and place the muffins on a wire rack to cool a little.
