Nourishing Salad Bowls

Essential Sports Nutrition Ingredients:

- ¾ cup (150g) dried green lentils
- 1 ½ cup (360ml) vegetable stock
- 15 oz. (425g) baby potatoes (approx. 20-30 baby potatoes)
- 2 tbsp. olive oil
- 9 oz. (260g) asparagus spears (approx. 16 asparagus spears)
- 8 cups (600g) mixed green lettuce
- 3 tbsp. chopped fresh dill
- ½ red onion
- 4 tbsp. balsamic salad dressing, or dressing of choice
- Salt & pepper to taste

Essential Sports Nutrition What You Need to Do:

1. Preheat the oven to 400°F (200°C).
2. Remove the tough ends from the bottom of the asparagus spears (approximately 1 inch) and halve the baby potatoes. Thinly slice the onions and set aside.
3. Rinse the green lentils and place them in a medium-sized saucepan with the vegetable stock and a pinch of salt and pepper. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to simmer, cover with a lid, and cook the lentils for 20 minutes.
4. Toss the asparagus and potatoes in olive oil, salt, and pepper. Line two baking trays with parchment paper, and place the asparagus on one sheet and the potatoes on the other. Roast the potatoes in the oven for 20 minutes until soft. After 10 minutes, add the asparagus to the oven and roast for an additional 10 minutes.
5. While everything is cooking, place the mixed greens into 4 serving bowls or onto a serving platter.
6. Once the lentils are cooked, drain off any excess liquid. Top the mixed greens with warm asparagus, potatoes, onions, chopped dill, and lentils.
7. Drizzle with balsamic salad dressing or dressing of your choice.
8. Serve immediately and enjoy the nourishing goodness of these vibrant salad bowls!
